Todays' Menu

Breakfast: 

1 piece of wholemeal toast

Avocado (instead of butter or margarine)

x1 Egg (with yolks) 

1 Glass of water 

Lunch: 

Crispy Grilled Chicken Wraps

Fruit Salad - Honeydew, rockmelon, grapes, watermelon. 

1L Water

Dinner:

2 Large spoonfuls of grilled chicken and pumpkin risotto

Dessert:

Wildberry Frozen Yoghurt 

Recipes: (easy) 

Grilled Chicken Wraps 

500gms Chicken Breast

1/4 Cup Bread Crumbs

Juice of one lime

A couple of cloves of garlic (crushed) 

  • Combine ingredients in a plastic bag 
  • Add the chicken 
  • Shake until chicken is coated evenly 
  • Grill
  • Scoop a spoonful of the mix into a wholemeal tortilla wrap

And you’re done.

Chicken & Pumpkin Risotto 

I used the leftover chicken from lunch and added it at the end. Again, grill about 500gms of Chicken breast. 

1 small butternut pumpkin (about 600gms)

1 1/2 cups Arborio rice

1L Chicken Stock (my wife made it - don’t ask me how)

1 large Brown Onion

1 chopped garlic clove 

1 Tablespoon of oil. 

Handful of fresh chopped parsley

  • Heat the oil in a large saucepan on medium heat
  • Combine pumpkin, garlic, onion and rice in a large saucepan, fry until onion turns clear
  • Add a cup of chicken stock stirring until stock is absorbed
  • Slowly add the rest of the stock until it is absorbed by the rice and slightly creamy (you might need to add boiling water if the chicken stock runs out
  • Meanwhile - grill the chicken 
  • Add the chicken right at the end 
  • Top with the parsley 

Throughout the day I just drank water and ate fruit for snacks.

Work is a killer for me. Most of the time I just bought subway and chinese out of convenience. So in order to change the lifestyle I had to change some bad habits and buying convenience foods was one of them. The trick is to get what you need ready the night before and grab it to go in the morning. 

These actually don’t taste too bad and I just make them up just before I have to eat them.

The 21 Day No Junk Food Challenge - Progress

21 Day Junk Food Free Challenge.

Day 1: What is your current weight and what would you like it to be? 140kgs 115kgs
Day 2: What is your favourite part of your body? Calves
Day 3: If you were at your ultimate goalweight right now what piece of clothing you buy/wear? Something smaller than what I wear now?
Day 4: What is your exercise routine? minimum of 1/2 hour of exercise per day and I make sure it varies. 
Day 5: What is your favourite healthy snack or treat? fruit 
Day 6: Do you binge? If so, when was your last binge and how did it makes you feel? I don’t binge, unless you count binging on fruit and I don’t 
Day 7: What was the last compliment you remember receiving?

Wife: She thought it was awesome I was athletically inclined (I could do with the body to go with that too though)

What is the best compliment you could possibly receive? 

“Damn” (from anyone I’m not predjudiced) 


1 week down (yay) - GOOD JOB!!

Day 8: Have you got any tips or tricks to keep yourself from eating junk food? Find healthier options. Buy a salad rather than a pie etc.
Day 9: What is your favourite type of exercise? Playing sport.
Day 10: What do you like in a partner? Motivation
Day 11: Which part of being healthy do you struggle with the most? Diet? Exercise? Sleep? Mental Health? Sleep. I don’t get enough of it.
Day 12: Why do you want to be fit? Who doesn’t wanna be fit?
Day 13: Do you have a special event coming up that you want to look good for? Who would you like to impress?
Day 14: Do you like yourself? How do you deal with negative feelings? What do you like the most about yourself?
